Fried half-chicken has long been enjoyed locally in Kushiro and Otaru regions of Hokkaido. With "Kaburitsuki Spring Chicken," the chef recreates the dish with his original techniques. He prides himself on the chicken which is so tender that even small bones can be eaten. It also goes well with beer. Another hit on our menu is our extra-large "hokke" (a type of mackerel), shipped from Rausu, a region famous for producing hokke, which is presented stunningly in "hiraki" style where the fish is opened up whole. The deep flavor of thick, fatty meat and the hearty portion of the fish hanging off the plate is enticing. At Kushirokuya, we strive to recreate the comforts of home.
